Spinach, the Power Food!

SpinachMay’s Cooks in the Kitchen submission time is here. This month’s food challenge: spinach, yum! As the Popeye the Sailor Man song danced in my head, I waffled between how best to represent this wonderful power food. Following is my entry of cream spinach.

This simple recipe calls for only a few ingredients and takes little time to prepare. Here is what you will need — fresh spinach, chopped onions, garlic, cream cheese, olive oil, lemon, salt and pepper to taste.

SpinachIngredientsLet’s get on with the steps…

Step One: Add the olive oil, chopped onions, and garlic to a medium sized pan over medium heat and cook until onions are golden brown. Stirring frequently.

SpinachOnionsStep Two: Add the spinach to the pan (washed and stems cut off). Squeeze the juice of half a lemon onto the spinach. Let cook until the spinach is wilted, stirring occasionally.

Step Three: Add the cream cheese until it is completely melted into the spinach and onions.

Step Four: Serve and enjoy!

SpinachCompleteSorry for the blurry picture. My hand was shaking with excitement at the thought of eating this in mere seconds!
