Potato Kale Soup

OLYMPUS DIGITAL CAMERAThere is something special about the potato. It can be served up in so many ways and in so many places. Did you know the potato was the first vegetable to be grown in space? In honor of that (and my husband being a space man), I introduce to you his Potato Kale Soup.

This is how it is done…

Peel (length wise) 3-4 large Yukon Gold potatoes.

OLYMPUS DIGITAL CAMERAIn a large skillet heat olive oil, enough to cover the bottom of the skillet.
Place potatoes into skillet and cook for only about a minute before adding two cups of water bringing everything to a boil.
Add the kale and the dill with everything still boiling.

OLYMPUS DIGITAL CAMERAAdd the spices, stir, and reduce heat to medium boil.

OLYMPUS DIGITAL CAMERAStir occasionally and let cook for about 10-15 minutes until potatoes are starting to become soft.

Serve and enjoy!

OLYMPUS DIGITAL CAMERAIngredients:

  • 3-4 large Yukon Gold Potatoes
  • 1 bunch Green Kale
  • 1 bunch Dill
  • 1 pint (.5 liters) Cream
  • 1-2 Tsp Turmeric
  • 1-2 Tsp All Purpose
  • 1-2 Tsp Spike Gourmet Natural Seasoning
  • 1-2 Tsp All Spice
  • 2 cups Water
  • Olive Oil (enough to cover the bottom of the skillet)
