Lime + Prosecco = Limescco!

It’s deadline day for the second Cooks in the Kitchen challenge. This month’s theme was limes. Limes are such a light, festive taste explosion that I instantly thought of drinks, didn’t you? Please welcome, the Limescco!

As springtime picnics, concerts in the park, and backyard parties start revving-up, here is a perfect, refreshing drink that will adapt to any celebration. It is so simple to make, you may want to drink it all year round. Here’s what you will need: limes, Prosecco, sugar, water, champagne flutes (or any glass you prefer).

  • Step 1 – Peel and slice the limes. Put them into a blender and blend until they become a smooth consistency. Strain the puree leaving the juice relatively pulp free. Set aside.
  • Step 2 – Put equal parts sugar and water into a sauce pan. Bring to a boil stirring constantly. When the sugar has dissolved completely, take it off the heat to cool.
  • Step 3 – Combine the lime juice and the simple syrup together (warning: it tastes so delicious at this point you may be tempted to drink it all now, but don’t).

  • Step 4 – Add a small/medium amount of the lime deliciousness to the bottom of a champagne flute and top it off with some chilled Prosecco. Add a twist of lime skin to the edge of the glass for added pizzazz.

  • Step 5 – Enjoy!

Ingredients:

  • 4 Limes
  • 1/2 cup Sugar
  • 1/2 cup Water
  • 1 bottle of Prosecco
